Development and Evaluation of Value-Added Products from Nile Tilapia (Oreochromis niloticus): A Farmer-Level Case Study from Armoor, Nizamabad, Telangana

Abstract

Nile tilapia (Oreochromis niloticus) is increasingly produced in India, but low farm-gate value can constrain farmer income in local markets. This study documents a farmer-led value-addition enterprise in Armoor, Nizamabad District, Telangana, where market-size tilapia of approximately 500 g is converted into fish nuggets, fish fry, fish balls, breaded fish fingers and fish pickle. The enterprise reports finished-product production of approximately 20 kg day⁻¹ and a higher economic return from processing than from conventional fresh/live fish sale. A descriptive case-study approach was combined with production-scale calculations, literature benchmarking of shelf life and processing technologies, and scenario-based economic analysis. At 26 operating days month⁻¹, the reported processing scale corresponds to approximately 520 kg month⁻¹ of finished products; at 300 operating days year⁻¹, annual output would be approximately 6,000 kg. Published Indian evidence supports the economic rationale for processing low-value fish, while ICAR-CIFT technologies demonstrate the suitability of fish mince for coated products and the extended shelf-life potential of fish pickle. Tilapia cutlets and fish balls have been reported to remain acceptable for about 18 weeks at −20 °C, whereas properly prepared fish/prawn pickle may have an average shelf life of about one year under suitable hygienic conditions. Because the farmer’s exact product-wise costs and selling prices were not available, economic outcomes were assessed through transparent sensitivity analysis rather than fabricated profit estimates. The case indicates that small-scale value addition can improve market flexibility, reduce dependence on immediate fresh-fish sale and enable farmers to capture a greater share of the consumer value chain. Product-specific cost records, microbiological validation and shelf-life testing are recommended before commercial scaling.
